2018 Vineyard Series Chardonnay- Henks
A traditional winemaking approach was used to produce this wine – handpicking and whole bunch pressing directly to 500-litre French oak puncheons for a natural fermentation followed by 10-month maturation on lees.

This wine was sourced from the north-facing Lusatia Park vineyard, sited in the red volcanic soils of Woori Yallock.

Perfumed raspberry fruit with lifted French oak spice aromatics.
Generous and juicy dark red berry fruits, complex whole bunch spice, culminating in chalky tannins and fresh acidity; delightful and moreish.
Petit Cordon by Maison Mumm Prestige Brut NV
Petit Cordon has refreshing notes of citrus fruits, grapefruit and blood orange. On the palate white fruits (pears) and yellow fruits (apricot, peach, Mirabelle) dominate, with a few discreet notes of ripe fruits and hints of honey and pastry shining through.
Petit Cordon has a frank and lively attack. before the fresh fruits gradually balance in the mouth. Overall it has a nice tension and a long structured finish.
Woombye Cheese Company Camembert
In 2012, Karen and Graeme Paynter decided to embark on a lifestyle change that took them from their fast-paced corporate roles overseas to the Sunshine Coast hinterland where they started Woombye Cheese Company. They were intent on settling in a rural community where they could source premium milk from neighbouring dairy farms, knowing that quality cheese production started with quality milk. Jersey and Friesian milk, collected from three local farms, is used to make a range of surface-ripened cheese.
The interior of this cheese slowly breaks down to a sticky cream with a silky smooth texture. This Australian ‘camembert’ displays a mild, traditional brassica flavour when ripe and is best enjoyed when the bloomy white rind starts to breakdown on the edges which is often close to its best before date.
Berry's Creek Riverine Blue
The first of its kind made in Australia, and one of only a few made in the world, this buffalo milk blue cheese is something special.
Cheesemaker Barry Charlton of Berry’s Creek Gourmet Cheese collects fresh milk from Sunrise Plains Farm who milks a modest herd of just forty-one Riverine water buffalo. Barry uses a secret blend of cultures to develop complex savoury flavours and a buttery texture over the two month maturation period.
Riverine Blue is made in limited quantities on a seasonal basis.
Queso Manchego DO
Manchego is the most popular ewes’ milk cheese in Spain. The milk comes from the local breed of Manchega sheep and the shape and outer rind of this cheese is quite distinctive and originated from the traditional grass-woven moulds that leave a zigzag impression on the sides of the cheese, as well as a small wooden board that is used to imprint a wheat pattern on the top.
Manchego is sold at various degrees of maturation and varies in flavour according to age and every cheese has a certificate of authenticity attached
